Banana Bread


  • 1 package Swerve Sweets Vanilla Cake Mix
  • 3 large eggs 
  • ⅓ cup water 
  • ⅓ cup oil 
  • 1 TBSP vanilla extract 
  • ¼ cup almond flour 
  • 1 heaping TBSP coconut flour 
  • 1 tsp cinnamon 
  • 1 tsp baking powder 
  • 2 ripe bananas, chopped into bite sized pieces 
  • ¼ cup pecans, chopped


  1. Preheat the oven to 350F. Line a loaf pan with parchment paper. Grease the parchment paper with butter.
  2. Make the vanilla cake according to the package directions. Add the almond flour, coconut flour, cinnamon, and baking powder. Mix until well combined. Gently fold in the bananas.
  3. Pour the batter into the parchment lined loaf pan. Sprinkle the top with the chopped pecans, then press the pecans gently into the batter.
  4. Cover the pan with foil and bake for 1 hour. Once baked, transfer to a cooling rack. Let cool before slicing.

Makes 12 servings.
