Banana Bread
Ingredients
- 1 package Swerve Sweets Vanilla Cake Mix
- 3 large eggs
- ⅓ cup water
- ⅓ cup oil
- 1 TBSP vanilla extract
- ¼ cup almond flour
- 1 heaping TBSP coconut flour
- 1 tsp cinnamon
- 1 tsp baking powder
- 2 ripe bananas, chopped into bite sized pieces
- ¼ cup pecans, chopped
Instructions
- Preheat the oven to 350F. Line a loaf pan with parchment paper. Grease the parchment paper with butter.
- Make the vanilla cake according to the package directions. Add the almond flour, coconut flour, cinnamon, and baking powder. Mix until well combined. Gently fold in the bananas.
- Pour the batter into the parchment lined loaf pan. Sprinkle the top with the chopped pecans, then press the pecans gently into the batter.
- Cover the pan with foil and bake for 1 hour. Once baked, transfer to a cooling rack. Let cool before slicing.
Makes 12 servings.
