Blood Orange Upside Down Cake
- Preheat the oven to 350° F and line a round cake pan with parchment paper.
- Add the orange zest and juice to the prepared cake batter.
- Sprinkle the granulated Swerve into the cake pan then lay the sliced blood oranges in a single layer in the bottom of the pan. Pour the cake batter over the oranges and transfer to the oven.
- Bake the cake for 30-35 minutes until the center no longer moves and a toothpick inserted into the center comes out clean. Run a knife around the edges and invert the cake onto a serving stand.
