Blood Orange Upside Down Cake

  1. Preheat the oven to 350° F and line a round cake pan with parchment paper.
  2. Add the orange zest and juice to the prepared cake batter.
  3. Sprinkle the granulated Swerve into the cake pan then lay the sliced blood oranges in a single layer in the bottom of the pan. Pour the cake batter over the oranges and transfer to the oven.
  4. Bake the cake for 30-35 minutes until the center no longer moves and a toothpick inserted into the center comes out clean. Run a knife around the edges and invert the cake onto a serving stand.
