Coconut Highball

Ingredients

  • 1.5 oz coconut rum or tequila
  • 2 oz coconut cream
  • 4 oz lime sparkling water
  • 1 tbsp Swerve Granular, plus extra to coat rim of glass
  • Zest of a lime
  • Handful mint leaves

Instructions

  1. Combine Swerve and lime zest in a shallow dish. Wet rim of glass and then dip in Swerve mixture.
  2. Muddle mint leaves at the bottom of a glass and add ice.
  3. Combine Swerve, rum, and coconut cream in a shaker with ice. Pour into glass, top with lime sparkling water and enjoy!
