Collagen Energy Bites
Ingredients
- 1/2 cup creamy almond butter (unsweetened)
- 2 tbsp coconut oil
- 1/2 tsp vanilla or caramel extract
- ⅛ tsp salt
- 1/3 cup Swerve Confectioners
- 1/3 cup collagen peptides
- 3 to 4 tbsp almond flour
Instructions
- In a microwave safe bowl, combine the almond butter and coconut oil. Melt on high in 30 second increments until they can be stirred together.
- Stir in the vanilla extract and salt, then stir in the Swerve and the collagen until well combined and smooth. Work in the almond flour, a few tablespoons at a time, until the mixture is a thick dough.
- Roll the mixture into 1 ½ inch balls and place on a waxed paper lined tray.
- If desired, roll in shredded coconut or add some sugar-free chocolate chips.
- Keep refrigerated.
