Ingredients

  • 1/2 cup creamy almond butter (unsweetened)
  • 2 tbsp coconut oil
  • 1/2 tsp vanilla or caramel extract
  • ⅛ tsp salt
  • 1/3 cup Swerve Confectioners
  • 1/3 cup collagen peptides
  • 3 to 4 tbsp almond flour


Instructions

  1. In a microwave safe bowl, combine the almond butter and coconut oil. Melt on high in 30 second increments until they can be stirred together.
  2. Stir in the vanilla extract and salt, then stir in the Swerve and the collagen until well combined and smooth. Work in the almond flour, a few tablespoons at a time, until the mixture is a thick dough.
  3. Roll the mixture into 1 ½ inch balls and place on a waxed paper lined tray.
  4. If desired, roll in shredded coconut or add some sugar-free chocolate chips.
  5. Keep refrigerated.
