Collagen Protein Muffins
Ingredients
- 3/4 cup coconut flour
- 2/3 cup collagen peptides
- 1/2 cup Swerve Granular
- 1 tbsp baking powder
- 1/4 tsp salt
- 6 large eggs, room temperature
- 1/2 cup melted butter or coconut oil
- 1/4 cup water
- 1 tsp vanilla
- 1/3 cup sugar free chocolate chips
Instructions
- Preheat the oven to 350F and line a muffin pan with silicone or parchment muffin cups.
- In a large bowl, whisk together the coconut flour, collagen, Swerve, baking powder, and salt. Stir in the eggs, butter, water, and vanilla until well combined, then stir in the chocolate chips.
- Divide the mixture among the prepared muffin cups and bake 20 to 25 minutes, until firm to the touch and golden brown. Remove and let cool completely in the pan.
