Ingredients
- 1 ½ cups AP flour
- ⅛ tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- ½ cup shortening
- 1 cup Brown Swerve
- 4 large eggs
- ¼ cup buttermilk
- ¼ cup pumpkin puree
- 1 tsp vanilla extract
- 7-10 drops OOO Flavors - Pumpkin Spice
- ½ tsp butter extract
Instructions
- Preheat oven to 350F.
- Grease a loaf pan with butter generously.
- In a medium bowl, mix together your flour, salt, baking soda & cinnamon.
- In a large bowl, use a hand mixer on medium-high speed to combine the shortening and Brown Swerve.
- On low to medium speed, mix in your eggs.
- Alternating with buttermilk and puree add your dry ingredient mix to the shortening/Brown Swerve mixture.
- Add vanilla & OOO Flavors, mix.
- Pour batter into your prepared pan & bake for 35-40 minutes.
- *Optional: After your cake has cooled you can top with cream cheese frosting.
