Pumpkin Pound Cake

  • 1 ½ cups AP flour
  • ⅛ tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • ½ cup shortening
  • 1 cup Brown Swerve
  • 4 large eggs
  • ¼ cup buttermilk
  • ¼ cup pumpkin puree
  • 1 tsp vanilla extract
  • 7-10 drops OOO Flavors - Pumpkin Spice
  • ½ tsp butter extract


  1. Preheat oven to 350F.
  2. Grease a loaf pan with butter generously.
  3. In a medium bowl, mix together your flour, salt, baking soda & cinnamon.
  4. In a large bowl, use a hand mixer on medium-high speed to combine the shortening and Brown Swerve.
  5. On low to medium speed, mix in your eggs.
  6. Alternating with buttermilk and puree add your dry ingredient mix to the shortening/Brown Swerve mixture.
  7. Add vanilla & OOO Flavors, mix.
  8. Pour batter into your prepared pan & bake for 35-40 minutes.
  9. *Optional: After your cake has cooled you can top with cream cheese frosting.
