- 1 1/3 cups almond flour
- 1/3 cup Swerve Granular
- 3 tbsp cocoa powder
- 2 tbsp unflavored whey protein powder
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/3 cup water
- 1/4 cup butter, melted
- 1/2 tsp vanilla extract
Glaze
- 1/2 cup Swerve Confectioners
- 1/2 tsp vanilla extract
- 2 tbsp heavy cream
- Water to thin
- Natural orange food coloring
Spiderweb decoration
- 2 ounces sugar free dark chocolate
- 1/2 tsp coconut oil
Instructions
Donuts
- Preheat the oven to 325F and grease 8 wells of a standard donut pan very well.
- In a large bowl, whisk together the almond flour, Swerve, cocoa powder, whey protein, baking powder, and salt. Stir in the eggs, water, melted butter, and vanilla until well combined. If the batter is very thick, add an additional 1 tablespoon of water.
- Divide the batter among the prepared wells of the donut pan and bake 18 to 23 minutes, until just set and firm to the touch. Remove and let cool 15 minutes before flipping out onto a wire rack to cool completely.
Glaze
- In a medium bowl, whisk together the Swerve Confectioners, vanilla, and heavy cream. Add water, 1/2 teaspoon at a time, until a thin spreadable glaze is achieved. Whisk in orange food coloring to your liking.
- Spread the glaze over the tops of the donuts.
Decoration
- Working quickly while the glaze is still wet, melt the dark chocolate and coconut oil together until smooth. Place in a ziplock bag and snip off the very tip of one corner.
- Pipe three concentric circles around the tops of the donuts and drag a toothpick from the center to the edge in evenly spaced lines to create a spiderweb.
- Let cool until set.
