Sweet, Spicy & Savory Southern Cornbread

Ingredients

  • 3 Lg. eggs
  • ⅓ Cup olive oil
  • ⅓ Cup buttermilk
  • ½ tsp McCormick Butter Extract
  • Pinch of salt
  • Dash of black pepper
  • ½ tsp. Zatarains Crab Boil
  • 2 TBS diced jalapeños
  • ⅔ cup corn niblets
  • ⅔ cup shredded cheddar jack cheese

Instructions

  1. In a medium bowl, mix together oil, buttermilk, eggs, cornbread flavor, crab boil, butter extract.
  2. Stir in corn, jalapeños,  salt, pepper, and cheese.
  3. Stir in cake mix until no lumps remain.
  4. Pour batter into a square baking pan lined with parchment paper.
  5. Bake at 350* for 30-35 minutes, until golden brown.
  6. Remove from oven, glaze with butter and sprinkle with salt.
  7. Let cool in pan for 15 min.
  8. Serve & enjoy, y’all!
