DIRECTIONS:
Step 1
Preheat the oven to 425F.
Step 2
Pat the tenderloin dry and sprinkle all over with salt and pepper. Place in a large baking dish.
Step 3
In a small bowl, whisk together the oil, Swerve, garlic, mustard, and Italian seasoning. Brush all over the tenderloin. Bake 20 to 25 minutes, or until the internal temperature reaches at least 140F.
Step 4
Remove and let rest 10 minutes, then slice. Drizzle the pan juices over the pork before serving.
