DIRECTIONS:
CHOCOLATE CHIP COOKIES
Step 1
Preheat oven to 375 degrees.
Step 2
With a spoon, mix together flour, salt, baking powder, and baking soda in a bowl and set aside.
Step 3
Beat butter, Swerve, Brown Swerve and vanilla until creamy on medium speed.
Step 4
Add egg, and beat in until completely combined.
Step 5
Gradually beat in flour mixture until combined.
Step 6
Stir in chocolate chips.
Step 7
Spoon out a heaping tablespoon of dough onto greased on parchment paper lined cookie sheet.
Step 8
Place in oven and cook for 9-11 minutes- it is okay if the cookie looks uncooked in the middle.
Step 9
Let cool on the cookie sheet, then transfer to freezer for at least an hour.
VANILLA ICE CREAM
Step 1
Create an ice bath filling a large bowl with ice cold water, then place a smaller bowl in the ice bath/ larger bowl.
Step 2
Add cold whole milk and Swerve and whisk for about two minutes until Swerve dissolves.
Step 3
Add cold heavy whipping cream, vodka, and vanilla to milk mixture. Whisk for about 5 minutes until the liquid is ice cold.
Step 4
Pour mixture into ice cream maker following ice cream maker instructions. Typically, it takes 25-30 minutes to get a creamy consistency.
ASSEMBLY
Step 1
Take cookies out of the freezer, and place newly churned, soft serve ice cream in between frozen cookies. Wrap individual sandwiches in wax paper and place in an airtight container. Freeze for at least three hours.
Step 2
To serve, let sandwich sit out for about 15 minutes to slightly thaw.
