MOCHAE CHOCOLATE CHIP MUFFINS

DIRECTIONS:

Step 1

Preheat oven to 325F and line a standard muffin tin with paper liners (use parchment paper liners for best results).

Step 2

In a large bowl, whisk together the almond flour, Swerve, cocoa powder, whey protein powder, baking powder, and salt. Break up lumps as much as possible.

Step 3
Add melted butter, eggs, vanilla, and coffee and stir until well combined. Stir in chocolate chips.

Step 4
Divide mixture among prepared muffin cups and bake 25 to 30 minutes, until muffins are set and firm to the touch. Remove and let cool.


Makes 12 muffins.
