3 Ingredient Peanut Butter Cookies

  • 1 cup crunchy peanut butter
  • 1 large egg
  • 1/2 cup Swerve, Granular 
  1. Preheat over to 350 degrees F. Line a cookie sheet with parchment paper. 
  2. Combine all ingredients in a large mixing bowl. Mix until well combined. 
  3. Using a cookie scoop or your hands, form 15 one-inch balls and place on cookie sheet. Use a fork to press down and create a criss cross pattern on the top. 
  4. Bake for 10-13 minutes until tops are golden brown. Let cool on the cookie sheet, then enjoy!

      Hi Carol, Swerve and fiber do not affect blood sugar, so they are subtracted from the total carbohydrate count. To find next carbs in this recipe, 10g total carbs - 1g fiber - 7g Swerve = 2g net carbs. Hope this helps! Enjoy!

    I put this recipe I to carb manager app, it keeps telling me 96 calories for swerve, and 8 net carbs per cookie

      Hi Hollie, There are 44 calories per cup of Swerve, so you would only get 22 calories from Swerve in this recipe (or 2 calories from Swerve per cookie). The carbs from Swerve are considered non-impact carbs. Does you app take this into account? Your brand of peanut butter may be different from the one we used too!

    Do you use a natural peanut butter , the recipe doesn’t say the type of peanut butter used.

    I made these the other day and did not tell my husband that I used the swerve instead of regular sugar and he didn’t even notice the difference. LOL..he ate 2 more cookies after I told him just to see if he could tell the difference, but said they tasted the same as he would of expected with the regular sugar.

    Instead of peanut butter, could other nut butters be used instead, for example, almond butter? I like using almond butter (no sugar added) instead of peanut butter, as peanut butter isn't keto. I am on a keto lifestyle and way of eating, so it really is important. I have diabetes as well, so can't afford peanut butter raising my blood glucose levels.

    Question - I have seen concerns on other website that Swerve will give a more granular end product and it is suggested to grind it in a coffee mill. Would substituting confectioners Swerve work just as well without the grinding?

      Hi Donna! Yes, Confectioners will work, however, you'll want to use slightly less as it is more concentrated. Maybe 1/3 of a cup. Hope that helps!
