2 cups almond flour
1 cup Swerve Granular
3 egg whites
1 tsp vanilla
½ tsp almond extract
1 tbsp amaretto liqueur

Directions
Preheat oven to 325º F. Line a baking sheet with parchment paper and set it to the side.
In a large bowl, add the almond flour and Swerve Granular. Whisk until combined.
In a medium bowl and using a hand mixer, beat the egg whites until stiff peaks form, 4-5 minutes.
Add the egg whites, vanilla, almond extract, and amaretto liqueur to the dry ingredients. Stir until all ingredients are combined. The cookie dough should form into a soft, sticky paste.
Using a small ice cream/cookie scoop, roll the cookie dough into 1-inch balls. Roll each ball in Swerve Confectioners until fully coated.
Place the cookies on the baking sheet and lightly press each cookie with your hand. Small cracks may form on the edges. Leave 1 inch between each cookie.
Bake for 25 to 30 minutes. Remove from the oven, cool for a few minutes, then transfer to a wire rack to cool completely.
