Ingredients
“Galaxy” ice - Butterfly Pea Powder Tea
2 cups water
2 tsp Butterfly Pea Powder
Swerve lemon syrup
1 cup water
1 cup lemon juice - about 8 lemons
1 cup Swerve Granulated Sugar Replacement
Galaxy Lemonade
½ cup “Galaxy” ice (recipe below)
1 cup regular crushed ice
½ cup Swerve lemon simple syrup (recipe below)
Sparkling mineral water to top
Lemon slice for garnish
Directions
In a small saucepan over medium-low, heat water just until boiling and whisk in Butterfly Pea Powder.
Allow to cool completely.
Pour tea into ice cube trays and freeze until completely frozen.
Once frozen, crush the ice using n high power blender or shaved ice machine. You can also place the ice cubes in a freezer bag and crush it using an ice crushing mallet.
Swerve lemon syrup
In a small saucepan over medium heat, combine water, lemon juice and Swerve Granulated Sugar Replacement. Heat until dissolved and just beginning to boil, stirring occasionally.
Allow to cool completely.
Galaxy Lemonade
Using an 8-10 oz glass, fill the glass halfway with crushed ice.
Pour in ½ cup Swerve lemon syrup.
Fill another ¼ of the glass with “Galaxy” ice, then another layer of regular crushed ice.
Finish the last layer with “Galaxy ice” to close to the top of the glass.
Top off with sparkling mineral water or soda water to give a swirling “Galaxy” effect.
Garnish with a lemon slice
