  • ¾ cup unsalted butter (room temperature)
  • ½ cup of Swerve Granular
  • ¼ cup Swerve confectioners
  • 2 cups of flour
  • ½ tsp of cream of tartar
  • 1/2/tsp baking soda
  • ¼ tsp salt
  • ½ tsp of vanilla pure extract
  • 2 tsp of almond pure extract
  • ½ cup coconut oil
  • 1 egg
  1. Preheat oven to 350 degrees.
  2. Combine all ingredients and mix until combined, stopping to scrape down the sides while mixing.
  3. Place dough in refrigerator for at least 30 minutes.
  4. Remove from refrigerator, and scoop with tablespoon onto parchment paper lined baking sheets. Sprinkle each cookie with Swerve granular.
  5. Cook for 12-15 minutes - they should still look a little wet in the middle when you take them out.
  6. Let cool on the cookie sheet.

Makes 36 servings.

    This recipe comes up when sorting by gluten free recipes, but it lists “flour”. Is it really wheat flour or is the recipe assuming that the user will use almond flour?

      Hi Carol, This recipe is not gluten free. It has flour. We'll check on our filter and see why it's appearing as a GF recipe. Thank you for the heads up and sorry for the confusion!
