Almond Teacakes
Ingredients
- ¾ cup unsalted butter (room temperature)
- ½ cup of Swerve Granular
- ¼ cup Swerve confectioners
- 2 cups of flour
- ½ tsp of cream of tartar
- 1/2/tsp baking soda
- ¼ tsp salt
- ½ tsp of vanilla pure extract
- 2 tsp of almond pure extract
- ½ cup coconut oil
- 1 egg
Instructions
- Preheat oven to 350 degrees.
- Combine all ingredients and mix until combined, stopping to scrape down the sides while mixing.
- Place dough in refrigerator for at least 30 minutes.
- Remove from refrigerator, and scoop with tablespoon onto parchment paper lined baking sheets. Sprinkle each cookie with Swerve granular.
- Cook for 12-15 minutes - they should still look a little wet in the middle when you take them out.
- Let cool on the cookie sheet.
Makes 36 servings.
