Bacon Wrapped Meatballs

Ingredients
- 2 lbs ground beef
- 1/4 cup almond flour
- 1/4 cup ground chia seed
- 2 large eggs
- 2 cloves garlic, minced
- 1 tsp oregano
- 1 tsp salt
- 1/2 tsp pepper
- 3 tbsp oil or butter
- 1 lb bacon (not thick-cut)
- 1/2 cup Swerve Sweetener
- 2 tbsp chili powder (more if you like it spicy)
- 1 tsp chipotle powder (or more chili powder)
- 1/2 tsp cinnamon
Instructions
- In a large bowl, combine ground beef, almond flour, chia seed, eggs, garlic, oregano, salt and pepper. Mix with your hands to combine very well. Form into 36 meatballs.
- In a large saute pan, heat half of the oil or butter. Add half of the meatballs and brown all over (they will not be fully cooked through), then transfer to a paper-towel lined plate. Repeat with remaining oil and remaining meatballs.
- Preheat oven to 350F. Line a large, rimmed cookie sheet with foil and set a baking rack over it.
- Cut bacon strips in half. Wrap half a piece of bacon around each meatball and secure with a toothpick.
- In a medium bowl, whisk together the Swerve and spices. Dredge each meatball in the Swerve mixture to coat well. Set on baking rack and back 30 to 40 minutes, until bacon is crisped to your liking.
- Remove and serve immediately.
Makes about 36 servings.
