Basque Cheesecake

  • 1 1/4 cup Swerve Confectioners
  • 4 eggs
  • 24 oz cream cheese (3 blocks)
  • 1 1/2 cup heavy cream
  • 1 tsp vanilla bean paste
  • 1/4 cup all purpose flour
  • 1/2 tsp salt


  1. Preheat oven to 410F.
  2. Beat Swerve and room temperature cream cheese together with a hand mixer until creamy, approximately 3 minutes.
  3. Mix in eggs, one at a time (very important).
  4. Mix in cream & vanilla all the way.
  5. Mix in flour and salt.
  6. Spray springform pan with non-stick cooking spray, and then add two sheets of non-stick paper to the pan, criss-crossed to cover the whole pan. Make sure it comes up the edges so when the cheesecake rises it won’t spill over.
  7. Bake for 55 minutes.
  8. Let cool completely before releasing from pan.
