Blackberry Mug Cobbler

Ingredients

  • Pinch of salt
  • 1 TBS mayonnaise (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 ½ tsp water
  • 1/4 tsp almond extract
  • 10 gently mashed blackberries tossed in 1 tsp Swerve Confectioners

Instructions

  1. Grease the bottom and sides of a coffee mug, jar, or ramekin.
  2. In a small bowl add egg yolk, mayonnaise, water, and almond extract and beat until combined.
  3. Then add vanilla cake mix, 1 TBS Swerve Confectioners and pinch of salt.
  4. Fold in with spatula until combined.
  5. Let batter sit for 1-2 minutes.
  6. In buttered mug, jar or ramekin add ½ of the batter then add blackberries on top. Then layer the rest of the cake batter on top of the blackberries.
  7. Microwave for 1 minute 30 seconds, depending on your microwave.
  8. Let cool for a few minutes and enjoy!

Optional: sub raspberries or blueberries, or top off the cobbler with some Swerve Whipped Cream! Or both!
