Candied Pecans

  • 4 tbsp butter (half a stick)
  • 1 cup Swerve, Granular 
  • 2 tsp cinnamon
  • 1 tsp salt
  • 3 cups pecans*
  1. Line a large cookie sheet with parchment paper.
  2. In a large saucepan over medium heat, melt butter.  Add Swerve, cinnamon and salt and stir continuously until well combined and the Swerve is completely dissolved.  Take care not to overcook, as mixture may burn.
  3. Remove from heat and stir in pecans until well coated.  Pour mixture onto prepared pan and spread out pecans to reduce clumping.

*Any other nuts or a combination of nuts can be substituted.

Makes about 12 servings.

    I am not sure what we did wrong but the mixture did not stick to the nuts well at all. Now I’ve wasted both 3 cups of nuts and a decent portion of a package of swerve. I used granulated. It didn’t specify. Was that the mistake???Help!!! Sad that I wasted money and it didn’t work.

Thank you for pointing out that it was not specified, we will get that fixed right away. Can you tell me how long you stirred the mixture and at what temperature? We have noticed if you continuously stir the mixture at a higher temperature it will better stick to the pecans. I hope this helps, stay sweet

    I just made these and I made a couple of changes after I read the reviews. I cooked the mixture which was one cup swerve 5 tablespoons of butter and 1 teaspoon vanilla extract. I was afraid it was going to burn by the previous comments but I kept storing it on a high heat and toilet basically became The consistency for making candy. As soon as I start the nuts in it got very hard and was coming off the nuts, so I put it back on the stove on medium high heat until the mixture dissolved again and then poured out onto parchment paper. Turned out great and very delicious!

    Hi Swerve-land people, My question is this - Why does Swerve recrystallize when cooling my lemon curd for lemon bars? My recipe includes 3 large eggs, 3 large yolks, 3/4 cup fresh squeezed lemon juice, fine zest of 6 medium lemons, 1 cup granulated swerve, 1 teaspoon kosher salt. Combine and cook over medium-low heat in a stainless steel saucepan while continuously whisking with a stainless steel/flexible balloon whisk. Cook until thickened. What did I do wrong? HELP. This is my favorite dessert on the planet :-) THANKS!

      Hi Nickie, You didn't do anything wrong! The erythritol in Swerve can sometimes recrystallize in recipes that have a high percentage of Swerve, or if they don't have enough fat. You should be able to prevent recrystallization in this recipe by adding 2-4 TBSP of butter and/or reducing the Swerve to about 3/4 cup. Hopefully this helps!

    Both your granulated and you’re confectioners products say that they measure just like sugar but I find that the confectioners a 12 ounce bag has 2 cups where as the granulated only has about a cup and a half. If I use a cup and a half of confectioners wow I get the same amount of sweetening power as a cup and a half of granular ?

      Hi Lauren, you are correct - a 12 oz bag of granular contains 1.5 cups of Granular Swerve and 2.5 cups of Confectioners Swerve. This is because confectioners Swerve/sugar weighs less than granulated Swerve/sugar. Therefore, you will need to use more Confectioners Swerve to achieve the same sweetness as 1.5 cups granular Swerve. Roughly 1 bag of Granular Swerve has the same sweetness of Confectioners Swerve. Hope this helps!

    Hi, in the nutrition facts of the pecans says the total amount of carbs is 20grs. But the net carb of the pecans is 1grm. Is swerves carb free? Or how come it is counted on the carb section as 16 grms and then the net carbs is Only 1 grm. Is confusing! Thanks

    Would this recipe work if the butter was replaced with olive oil? I just don’t like adding saturated fats to healthy nuts.
