Chocolate Buttercream Frosting

  • 1 cup salted butter
  • 2/3 cup Swerve, Confectioners
  • ¾ cup unsweetened cocoa powder
  • 1 TBS vanilla extract
  • 1-2 TBS milk or almond milk
  • ½ tsp espresso powder (optional)
  1. Place all ingredients in mixer bowl. Mix on low until all ingredients are combined, about 2 minutes.
  2. Increase speed to medium high, and mix for 10 minutes.

    That's a lot of butter! I know people on low carb diets don't care how much fat is used usually, but some people watching sugars and calories do. I made a delicious chocolate icing based on one on the bag of Ghirardelli unsweetened cocoa (using Swerve confectioner's instead of regular confectioner's sugar) that called for way less butter.

    Wow, this frosting was perfect! I was skeptical at first with the long mixing time, but it produced such a lovely light and fluffy frosting. Definitely add the espresso powder for an extra richness. Thanks for the wonderful recipe. It is definitely a keeper!

    Any suggestions on making this delicious frosting a little less tart? Maybe less cocoa and more sugar? Or just more sugar? Or anything else to have it more milk-chocolaty?

      Hi Mary, You can try omitting the espresso, and reducing the cocoa powder to 1/3 cup. Also, be sure to mix for a full ten minutes!

    I’m wondering how you got your carb count. I just added up the ingredients and come up with only 2.6g carbs per serving.
