Classic Meatloaf
Ingredients
Meatloaf
- 2 lb ground beef (or 1 lb ground beef, 1 lb ground pork)
- ½ cup almond flour
- ¼ cup chopped onions
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 large egg
Glaze
- 3 tbsp tomato paste
- ¼ cup water
- 2 to 3 tbsp Swerve Brown
- 2 tsp apple cider vinegar
- 2 tsp chili powder
- ½ tsp garlic powder
- 1 tsp Worcestershire sauce
Instructions
- Preheat the oven to 350F and line a rimmed baking sheet with parchment paper or foil.
- For the meatloaf, mix together the ground meat, almond flour, onions, garlic, salt, and pepper in a large bowl. Stir to combine and break up any clumps. Add the egg and use your hands to mix well.
- Transfer to the prepared baking sheet and form into a loaf about 5x9 inches. Bake 40 minutes.
- Meanwhile whisk together all of the glaze ingredients in a medium bowl until well combined. Brush all over the meatloaf and return to the oven for another 10 minutes.
- Let the meatloaf rest 10 to 15 minutes before slicing.
