Classic Meatloaf

  • 2 lb ground beef (or 1 lb ground beef, 1 lb ground pork)
  • ½ cup almond flour
  • ¼ cup chopped onions
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 large egg


  • 3 tbsp tomato paste
  • ¼ cup water
  • 2 tsp apple cider vinegar
  • 2 tsp chili powder
  • ½ tsp garlic powder
  • 1 tsp Worcestershire sauce


  1. Preheat the oven to 350F and line a rimmed baking sheet with parchment paper or foil.
  2. For the meatloaf, mix together the ground meat, almond flour, onions, garlic, salt, and pepper in a large bowl. Stir to combine and break up any clumps. Add the egg and use your hands to mix well.
  3. Transfer to the prepared baking sheet and form into a loaf about 5x9 inches. Bake 40 minutes.
  4. Meanwhile whisk together all of the glaze ingredients in a medium bowl until well combined. Brush all over the meatloaf and return to the oven for another 10 minutes.
  5. Let the meatloaf rest 10 to 15 minutes before slicing.
