Easy Air Fryer Cupcakes
Ingredients
Cupcakes
- 1 cup Swerve Sweets Chocolate Cake Mix (Spoon into the cup, don’t pack it)
- 1 large egg
- 2 tbsp melted butter
- 2 tbsp water
- 1 tsp vanilla extract
Vanilla Frosting
- ¼ cup butter, softened
- ½ cup Swerve Confectioners
- 3 tbsp heavy cream, room temperature
- ½ tsp vanilla extract
- Food coloring, if desired
Instructions
Cupcakes
In a medium bowl, whisk together the cake mix, egg, melted butter, water, and vanilla extract until well combined and smooth. Divide between 4 silicone muffin cups.
Place the muffin cups in an air fryer and bake at 300F for 12 to 15 minutes, until the tops are set. Remove and let cool.
Frosting
In a medium bowl, beat the butter until lightened and fluffy. Beat in the sweetener until well combined. Drizzle in the cream and beat until the frosting is a spreadable consistency. Beat in the vanilla and food coloring, if using.
Pipe or spread on the cooled cupcakes.
