Ginger Pear Skillet Cake

  • 2 1/4 cups almond flour
  • 1/2 cup Swerve, Granular
  • 1 tbsp cocoa powder (optional, gives it a deep color)
  • 1 tbsp baking powder
  • 1 tbsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 large eggs
  • 6 tbsp butter, melted
  • 1/2 cup unsweetened almond milk
  • 1/2 tsp vanilla extract
  • 1 medium pear, thinly sliced


  1. Preheat oven to 325F and grease a 10-inch skillet well. Alternatively, you can use a 10-inch pie plate or cake pan.
  2. In a large bowl, whisk together the almond flour, Swerve, cocoa powder, baking powder, ginger, cinnamon, and salt. Whisk in eggs, butter, almond milk, and vanilla extract until well combined.
  3. Spread batter in skillet or baking pan and arrange pear slices in a circle on top. Bake 45 to 50 minutes, until center is set. Remove and let cool in pan.

Makes 12 servings.
