Ingredients
- 2 1/4 cups almond flour
- 1/2 cup Swerve, Granular
- 1 tbsp cocoa powder (optional, gives it a deep color)
- 1 tbsp baking powder
- 1 tbsp ground ginger
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 3 large eggs
- 6 tbsp butter, melted
- 1/2 cup unsweetened almond milk
- 1/2 tsp vanilla extract
- 1 medium pear, thinly sliced
Instructions
- Preheat oven to 325F and grease a 10-inch skillet well. Alternatively, you can use a 10-inch pie plate or cake pan.
- In a large bowl, whisk together the almond flour, Swerve, cocoa powder, baking powder, ginger, cinnamon, and salt. Whisk in eggs, butter, almond milk, and vanilla extract until well combined.
- Spread batter in skillet or baking pan and arrange pear slices in a circle on top. Bake 45 to 50 minutes, until center is set. Remove and let cool in pan.
Makes 12 servings.
