Hibiscus Lime Mimosas


  • 1 cup water
  • ½ cup dried hibiscus flowers 
  • ½ cup Swerve Confectioners 
  • ¼ cup fresh lime juice
  • Champagne or prosecco for topping up


  1. In a medium saucepan, combine the water, hibiscus flowers, and Swerve Confectioners. Bring to a boil, then reduce the heat and simmer for 10 minutes. Strain through a fine mesh sieve, pressing on the solids to release as much moisture as possible.
  2. For the mimosas, add 1 tbsp lime juice and 2 tbsp hibiscus syrup to each of 4 champagne glasses. Top up with champagne.

Makes 4 servings.
