Ingredients
- ½ cup Swerve, Confectioners
- ½ cup water
- 1 lb frozen mango
- 1 Tbsp lime juice
- 1 Tbsp vodka
Instructions
- Make simple syrup. Add Swerve and water to a medium pot over high heat. Whisk until Swerve is dissolved.
- Add simple syrup, mango, lime juice, and vodka to a blender or food processor. Blend until completely smooth. Once smooth, strain through a fine mesh sieve, using a spatula or whisk to help push the pulp through.
- Freeze in ice cream maker for about 30 minutes, or until thick and creamy.
- Scoop and enjoy immediately.
Makes about 4 servings, or 2 cups
