  1. Make simple syrup. Add Swerve and water to a medium pot over high heat. Whisk until Swerve is dissolved.
  2. Add simple syrup, mango, lime juice, and vodka to a blender or food processor. Blend until completely smooth. Once smooth, strain through a fine mesh sieve, using a spatula or whisk to help push the pulp through.
  3. Freeze in ice cream maker for about 30 minutes, or until thick and creamy.
  4. Scoop and enjoy immediately.

Makes about 4 servings, or 2 cups
