- Preheat the oven and line a 24-cavity mini cupcake pan with silicone or parchment liners.
- Prepare the brownie batter as directed on the box. Spoon into the prepared pan and bake 15 to 20 minutes, until puffed and just firm to the touch. Remove and let cool completely, then remove from the liners.
- In a large bowl, whip the cream with the Swerve Confectioners and the vanilla until it holds stiff peaks. Pipe a circle of whipped cream onto the top of each brownie bite.
- Top with a strawberry and then pipe a small pompom onto the the top of the strawberry.
Note: these treats are best served fresh, but you can prepare the brownie bites in advance.
