Triple Chocolate Fudge Brownies

Ingredients

Brownies

  • 1 large egg
  • ½ cup water
  • ½ cup avocado oil (or oil of choice)
  • ½ cup dark chocolate chips

Chocolate Ganache

  • ⅓ cup heavy cream
  • 1.5 oz unsweetened chocolate, chopped
  • ¼ tsp vanilla extract

Instructions

  1. Preheat oven to 350 degrees F. Grease an 8x8 baking dish heavily with butter, or line with parchment paper. Set aside.
  2. In a large bowl, add the brownie mix, egg, water, and oil. Stir with a whisk until well combined.
  3. Fold in chocolate chips with a spatula until well incorporated into the batter.
  4. Spread the brownie batter into the prepared baking dish.
  5. Bake for 25-38 minutes or until the middle of the brownies is set.
  6. While the brownies are baking, make the chocolate ganache: Over a double boiler, add heavy cream, Swerve, chopped chocolate, and vanilla. Whisk until smooth. Remove from heat and set aside.
  7. Let cool for about 30 minutes.
  8. Once brownies are cooled, remove from pan and pour ganache over brownies. Spread evenly over the brownies, then slice into squares.
