Two Bite Brownies

  • 6 tbsp butter
  • 3 ounces unsweetened chocolate
  • 3 large eggs
  • 6 tbsp Swerve, Granular
  • 3/4 tsp vanilla extract
  • 2 tbsp water
  • 3/4 cup almond flour
  • 3/4 tsp baking powder
  • 1/4 tsp salt


  1. Preheat oven to 325F and grease a mini muffin pan very well.
  2. In a large saucepan, melt butter and chocolate together over low heat and whisk until smooth. Remove from heat.
  3. Whisk in the eggs, sweetener, and vanilla extract until well combined. Your mixture may seize up, this is normal. Whisk in the water until mixture smooths out.
  4. Whisk in almond flour, baking powder, and salt until well combined. Divide the batter among prepared muffin cups and bake 8 to 12 minutes, until the edges are set and the centers are domed slightly. Cook on the lower end of the time range for fudgier brownies.

Makes 24 (2 per serving).
